Saperavi is Georgia’s most famous red grape, which makes very dark, almost black, intense, wines.
This is made under Qvevri: a large clay vessel buried in the ground for a cool, constant temperature and sealed for six months. The egg shape promotes the flow and mixing of grape juice and pomace, giving it greater structure, complexity, and expressive character.
This is a rich, full-bodied wine bursting with flavours of black cherry, pomegranate, dark chocolate, black pepper, sweet spice, all lifted by minty aromas. The palate is juicy and velvety, with well-integrated tannins, good acidity, and an earthy complexity from the qvevri ageing.
Long on the finish, this will pair superbly alongside grilled meats and vegetables, stews, game or strong, aged cheeses.
