A low intervention wine made in Moldova, aged in stainless steel.
Dóldora is a juicy, spicy red wine made from Saperavi. Saperavi is an ancient grape with a reputation for producing full-bodied, hearty wines.
In producing Dóldora however, Constantin and Roman chose to just take the edge off, by gently crushing and then cold soaking the grapes. The result is a complex, fruity and smooth wine packed with flavours of cherry, black pepper and clove.
Pairs magnificently with food but has more than enough main character energy to be enjoyed on its own.
