Since 1860, these Limoux vineyards on the foothills of the Pyrenees have thrived on limestone-rich slopes kissed by four winds, creating a unique microclimate and giving this wine its name. The viticulture is Certified TERRA VITIS and under conversion to organic since 2020.
A blend of 70% Chardonnay and 30% Chenin Blanc, this zero-dosage pour shows a crystalline yellow colour with golden reflections. Then followed by a nose of ripe citrus, delicate white flowers, and flinty minerality. On the palate, it is pure and refined, with a lean, chiselled yet complex finish.
Pure and elegant, this makes a perfect celebratory aperitif or a joy to pair alongside seafood, fresh raw fish like ceviche or sushi.
